On a hot summer's day, there's nothing like crisp, spicy, radishes to perk up you and your salad. :)
Here's a very simple radish salad recipe for you. I can't even remember where this recipe came from, maybe my mother or my grandmother, but I've been making it for years and years. I alter it from time to time trying different vinegars, or adding a different fresh herb to it and you can too - whatever suits your fancy, it's simple and delicious.
Simple Radish Salad with Honey Dressing
1 half of a large bunch of fresh radishes – washed and cut into thin slices.
For the Dressing:
2 scallions (spring onions) washed & coarsely chop ( both white and green parts)
1 teaspoon Dijon mustard
1 Tablespoon olive oil
½ teaspoon honey
½ teaspoon vinegar (cider, white wine or rice wine vinegar)
Mix together all of the ingredients for the dressing and pour over the sliced radishes.
Let sit for 20 minutes before serving.
Can be eaten as is, or serve over a bed of mixed salad greens with slices of boiled egg for garnish.
That's as simple as it gets, but it's a yummy salad!
Oh yeah, almost forgot this part ...
For the colored pencil drawing of the radishes, (which were sitting on my desk), I used:
4Prismacolor, Lyra-Rembrandt Polycolor and Faber-Castell Polychromos regular colored pencils
